Einkorn

 Einkorn is an ancient relative of modern wheat that makes a nice loaf. The recipe I used was based on one provided by Doves Farm adapted for my machine. 

The Dove's recipe cautions against kneading the dough after mixing. After some experimenting, I found that 6 minutes of the manual "Bread Kneading" program was enough to thoroughly mix the ingredients. My machine doesn't have an automatic program that appears suitable although the Rye program #12 might be OK with just 10 minutes kneading.
